Our dashi (Japanese broth) is made from katsuobushi shaved in-house to an ultra-thin 0.01mm,
using premium Ibuki Honkarebushi—an award-winning katsuobushi recognized
by the Minister of Agriculture, Forestry, and Fisheries.
Driven by our desire to share the finest pork with more people,
we’ve perfected a rich, high-purity katsuobushi broth,
leading to the creation of our signature, Dashi Shabu-Shabu.

This is a new type of shabu-shabu that is based on a special golden broth made from Ibusuki-grown bonito flakes, to which freshly shaved premium bonito flakes are added, and is eaten like a small bowl of cold soba noodles, dipped in a sauce made from white ponzu sauce and sesame paste.
